Description
Fenugreek looks similar to alfalfa and other members of the pea family. Fenugreek, Trigonella foenum-graceum, is a small, upright annual herb. The fenugreek plant has light green leaves with three small, oblong leaves. The flowers are yellowish-white and 10-15cm long fruits (4-6 inches) that like other legumes forms a pod with 10-20 seeds, a bit like a miniature broad bean pod. To harvest fenugreek, the whole plants are uprooted and left out to dry in the sun. They are threshed and then the seeds are dried further to around 10% moisture levels. Fenugreek seeds are like small hard pieces of triangular gravel (3-5mm long; up to 0.25 inches long); the fenugreek seeds are golden brown in colour. The aroma is mild and like dried peas, while the flavour is mildly bitter and also pea-like, or perhaps more like those dried broad beans that you can find in Arabic stores. The dried leaves – methi – have a grassy, hay-like aroma with a leguminous taste and mild bitterness.
